WHAT DO I NEED?

Feeds: 2Time to cook: about 10 minssix rashers of lean oak smoked back bacon15ml (1tbsp) oil300g (10oz) cooked new potatoes - drained and thickly slicedone red onion - thinly slicedfour eggs15ml (1tbsp) fresh chives, pitted and slicedsix green olivesas many fresh cherry tomatoes as you can eat100g (4oz) torn Mozzarella cheeseWHAT SHOULD I DO?Heat the oil in a non-stick frying pan and cook the bacon, the potatoes and onion for about 20 minutes, or until just turning golden brown.

Meanwhile beat the eggs with the chives.

Add the olives to the pan, the tomatoes and cheese.

Pour in the eggs into the pan and cook until just set.

Finish cooking under a pre-heated grill until brown and crispy.

Serve the frittata sliced into thick wedges with extra grilled tomatoes and a green crisp salad.
